Salad With Triple Cheddar Fruit Kabobs

  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tsp dijon mustard
  • 1/3 cup vegetable oil
  • Salt and pepper to taste
  • 8 cups baby spinach (or Boston lettuce leaves), washed and dried
  • 4 oz Balderson Mild Cheddar
  • 4 oz Balderson Marble Cheddar
  • 4 oz Balderson Medium Cheddar
  • 8 bamboo skewers
  • 1 Royal Gala apple
  • 16 green or red grapes (or any seasonal fruit)
  • 1/4 cup walnuts, toasted and chopped (optional)
  1. Pour all dressing ingredients into screw-top jar. Seal jar and shake well.
  2. Season to taste, and set aside.
  3. Divide greens among 4 dinner plates.
  4. Cut each cheese into 8 cubes, making 24 cubes in all.
  5. Thread I cube of each kind of cheese onto each skewer, alternating with pieces of fruit.
  6. Place 2 skewers on each salad.
  7. Drizzle with dressing.
  8. Sprinkle with walnuts, if desired.
